Summer Squash Recipes- No Cooking!

Summer squash is in season during the hottest days of summer so who wants to turn on the stove?  My mom always made pasta salad, egg salad and marinated vegetable salads so that we would have nice chilled dinners.  I can be inspired to make dinner or these great snacks without cooking.  Let me know your favorite ways to eat squash.

This is a good blog for healthy recipes.  She grew the squash for this recipe and some are called Flying Saucer Squash so I had to read it!  There are pictures of this cute variety on her blog.  She also has a great tip to dry the squash before placing in the salad.  I love this tip and it makes so much sense.  She also uses a variety of squash, just like we received in the CSA share this week.  Enjoy this recipe.

Sweet Zucchini Relish

Great idea to do a relish with zucchini.  This would work well with the yellow zucchini that we received in the share this week.  I like the idea of adding more vegetables to summer favorites like hamburgers.  Thanks Zahira!

Zucchini Pickles

This tip has been in Cooking Light Magazine’s Aug 2010 issue, email alerts from great restaurants and on blogs.  Most of the posts are the idea to make squash pickles from your favorite pickle recipe.  Here is one that is great with squash!

1 lb zucchini
1 yellow onion
2 tablespoons salt (kosher or sea)
2 cups apple cider vinegar
1 1/2 teaspoons dry mustard
1 1/2 teaspoons yellow mustard seeds
1 teaspoon turmeric
sugar to taste, up to 1 cup

This recipe was posted while I was reading the blog and it sounds delicious.  You could use it with the yellow zucchini from the share as it has the same consistency as green or black zucchini.  If you really want a green zucchini, head down to the Railyard Waffle Garden and feel free to pick some from our demonstration garden.  It was planted for the community and you are all part of our community!
