Grapefruit Recipes

GrapefruitThe grapefruit in last week’s share was lovely and large. Eating grapefruit for breakfast with a little sugar is a nice winter treat. These grapefruits are from Arizona in our regional food system.

Grapefruit can help your metabolism by keeping you full longer so many people eat it before meals. It also has vitamin C and A as well as beta-carotene and lycopene.

Here are ideas for cooking with your grapefruit for a salad and baked goods. The grapefruit size could cover as two for these recipes.

Grapefruit & Arugula Salad

1/2 Grapefruit from CSA share, segmented

1/2 Red Onion, sliced thinly

1 bunch Arugula mixed with the same amount of lettuce

Lemon juice and Olive Oil

Feta cheese for a topping

Fold the arugula and lettuce and chop. Mix the two greens in the bottom of a bowl. Mix the lemon juice and olive oil and add in two circles over the top of the bowl. Mix the salad and dressing. Add the grapefruit, onion and feta cheese. Enjoy the salad.
