Creamy Potato Parsnip Curry Soup Recipe

Slow Cooker – Creamy Potato Parsnip Curry Soup

2 Potatoes, cubed
2 Parsnips, cubed
1 Carrot, sliced
1/4 Onion, diced
2 Cloves Garlic, minced
1/2 cup heavy cream*
1 tsp grated Tumeric*
3/4 tsp curry powder*
salt and pepper (to taste)

*all measurements approximate

Place potatoes, parsnips, carrot, onion, garlic, salt and pepper in slow cooker. Add just enough water to cover contents, cook on low 6-7 hours. Add tumeric, curry powder, and heavy cream. Stir and cook an additional 1/2 hour. Carefully pour contents of crock pot into blender and liquify.
Yields 4-6 servings.
