Swiss Chard, Chicken & Bean Salad
1 bunch Swiss Chard
4 Chicken Breasts or Tenders
1 bunch Green Beans
2 cloves of Garlic
White Wine Vinegar
Kosher Salt and Freshly Cracked Black Pepper
Chop half of the lemon, half of the shallot, 1 clove of garlic, splash of vinegar, splash of oil and salt & pepper and place in a container with the chicken. Marinate for 5 hours. Grill the chicken and slice into thin wedges. Let cool.
Cut the tops and bottoms off the green beans. Bring a pot of water to boil. Add salt and the green beans. Blanch for a few minutes, then remove and add to ice water.
Remove the stems from the leaves of the swiss chard. Chop the stems finely. Roll the leaves together and slice thinly. Start a small saute pan and saute the stems with salt and pepper. Once they are softened, add the leaves, a splash of water and a lid. This will steam them quickly.
Place the green beans and chicken together and add the swiss chard down the middle. Use the remaining shallot, lemon, vinegar, olive oil, garlic and salt/pepper to create a dressing. Pour over the top and enjoy.
