Last night I had two meetings, my neighbor’s new puppy and a birthday cake to help bake for my non-profit. Dinner needed to be something quick that I could make from the ingredients in my house. CSA Tacos were easy to make from last week’s share.
Beef and Bell Pepper Tacos
1/2 lb ground Mesa Top Farm beef
1 Bell Pepper, diced
1/2 Onion, diced
2 Pinches Red Chile Powder
1 cup Bolita Beans, cooked in pressure cooker for 30 minutes
Cherry Tomatoes, cut in quarters
Brown the beef with kosher salt, pepper, red chile and onions. Remove any grease. Add the bell pepper and saute. Serve with beans and tomatoes. Enjoy.
