The beets from the CSA share can be eaten raw in salads. Just grate them with carrots and add a little dressing for a beet slaw. Here is a recipe for a salad that cooks the beets and adds a citrus punch of orange.
4 medium beets
1/4 teaspoon sugar
1 tablespoon butter
1 teaspoon ginger, julienned
1 scallion, finely sliced for garnish
