Spiced Pickled Apple Recipe

The apples are crisp and wonderful in their raw form.  I have some waiting to be enjoyed in my refrigerator, but want them to retain their crisp texture.  Here is a fun recipe to try.  It would be a great Halloween treat to share at a party or with your family.  Enjoy.

Spiced Pickled Apples

2 cups Apple Cider Vinegar

1 cup Water

1 cup Sugar

2 tsps Kosher Salt

1/4 cup Ginger, peeled and diced

1 tsp Allspice Berries

1 tsp Peppercorns

2 Cinnamon Sticks

2 Star Anise

1 lb Apples, cut in half or quarters

Prick the apples in a few spots.  In a medium saucepan, combine vinegar, water, sugar and all spices.  Bring to a boil and stir to dissolve sugar.  Add apples.  Cover and simmer for five minutes or until a pairing knife meets resistance.  Transfer the apples and liquid to a bowl and cool completely.

Transfer to a clean glass jar and refrigerate at least eight hours before serving.  Can be stored in your refrigerator for a month.
