Poblano Chicken Salad

The poblano peppers are a good ingredient to add to lots of dishes for flavor and a little spicy punch.  Local Organic Meals on a Budget is a Santa Fe collaboration of the Farmers Market Institute, Kitchen Angels and Home Grown New Mexico.  A few weeks ago we had an amazing home cook present a few of her flavor combinations.  She used finely diced poblano peppers (or you could use jalapeno) in this chicken salad.  I have changed the recipe a little, but you can find the original at localorganicmeals.com

Poblano Chicken Salad

Adapted from Local Organic Meals on a Budget

1 cup shredded chicken

1 cup apple, grated

1/2 cup organic celery, diced

1/2 cup organic bell pepper, diced

1 poblano pepper, diced finely

1/8 cup mayonnaise

1/4 cup sour cream

handful of cilantro, basil and mint

Mix together and eat as a sandwich or with tortilla chips.

  1. Yum. I love the poblanos. I don’t eat chicken but my family does and I think they’d like this.
