Summer Tomato Salad

Cherry tomatoes are my garden snacks during the summer.  We have  black cherry tomatoes that have not seen the house yet because they are consumed in the garden.  The cherry tomatoes in the share this week provided a good way for me to determine recipes for them.  Here is one that is easy and can be altered to have only tomatoes or add cucumbers, radishes or carrots.  You can also customize the herbs with two or three that you like.  I made this salad this week in a larger batch with six pounds of tomatoes.  It was a hit.  Enjoy.

Summer Tomato Salad

Adapted by Amy from Gourmet Magazine and Vegetarian Times

1 to 2 cloves garlic

3/4 tsp kosher salt

1-1/2 tblsp fresh lemon juice

1 tblsp sherry vinegar

1-1/2 tsp Dijon mustard

3/4 tsp sugar or agave (add honey to taste if you like a sweeter dressing)

1/4 tsp fresh black paper

6 tblsp extra-virgin olive oil

2-1/2 lbs cherry tomatoes, cut into quarters

1-1/2 lbs cucumbers or radishes or carrots

1/2 cup scallions

1/3 cup chopped herbs (tarragon, basil, mint)

Combine the garlic through olive oil and shake in a small jar.  Place tomatoes, cucumbers and scallions into a large bowl and mix.  Add the dressing and herbs before serving.  Enjoy.
