The apricots are almost gone so I am baking them into this lovely cake. The recipe seemed like a French caflouti, but is a much denser cake. The Luna Cafe in the Pacific Northwest posted this on their site. They have a beautiful website with photos of the cooking process that always make me hungry. I used ginger beer instead of ginger extract. If you have ginger extract, let me know where you bought it in New Mexico. Enjoy.
