I love red beets. They are high in vitamins, minerals, amino acids and iron. The greens have more iron content than spinach or swiss chard and should be sautéed as a cooking green. I usually steam or roast the beets to enjoy their sweetness. My family is not a fan of beets. They were on the counter last night and no one was interested in eating them as a vegetable for dinner. If they won’t eat them as a vegetable, they can eat them in dessert! Here are two recipes.
