Garlic Scape Pesto Recipe

Do you still have garlic scapes in your refrigerator?  I do!  They smell so lovely in a pan in the morning for my scrambled eggs and in fantastic mayonnaise for sandwiches.  I was looking for a way to use more of them and found this recipe on Dorie Greenspan’s website.  It includes almonds which add a great texture.  It also uses 10 garlic scapes.

From the Dorie Greenspan Website

Makes about 1 cup

10 garlic scapes, finely chopped

1/3 to 1/2 cup finely grated Parmesan (to taste and texture)

1/3 cup slivered almonds (you could toast them lightly, if you’d like)

About 1/2 cup olive oil

Sea salt
