On warm days, a cool lettuce salad is one of the best dinners.  The kitchen is too warm to start the oven and I don’t feel like being over the stove.  Salad is also one of the easiest vegetables to eat because there is hardly any preparation involved.  Here are some good additions to the lovely lettuce that we received in the CSA share this week.  I have these in my pantry or fridge all summer to enjoy quick salads with almost every meal.  I chop the veggies over the weekend and keep them in glass jars for easy use.  You can use three or four of these in a salad or the whole list!

Salad Ideas

  • Feta cheese
  • Cooked chicken breast, cubed (I usually grill mine)
  • Red Bell Pepper, diced
  • Cucumber, diced
  • Olives
  • Cherry or pear tomatoes
  • Almonds, sliced and toasted
  • Sunflower seeds
  • Sesame seeds
  • Pepitas, toasted and salted
