Carrot Ginger Soup

Fresh ginger from a biodynamic farm in Hawaii is an amazing treat this week.  Asian stir fry dishes are great with grated ginger and garlic in the sauce.  I made one today for lunch with a bell pepper and bok choy.  The spicy bite also adds a kick to other vegetables.  I am working on this carrot soup recipe that I posted from the Simple Comfort Blog in January.  I thought that it needed a little more ginger!

Carrot Ginger Soup

  •  1 Mesa Top Farm onion, diced
  • 1 pound of carrots, peeled, and roughly chopped
  • 3 cloves of garlic, diced
  • 3 tbsp fresh ginger, grated
  • 3 cups of vegetable stock
  • 1/2 cup of coconut milk
  • salt & pepper
