Fig Oatmeal Muffin Recipe

The frozen figs will work with baked recipes that member Alice sent in a few weeks ago.  I worked on one for a community garden party today.  Here is the adaptation of a Cooking Light recipe.

Fig Oatmeal Muffin Recipe

1 cup unbleached all-purpose flour

1-1/2 cups local whole wheat flour

1/4 cup local honey

1/4 cup sugar

1 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1 1/2 cups milk

1 1/4 cups frozen figs

2 tablespoons almond oil

1 tablespoon almond extract

1 Mesa Top Farm egg


1/3 cup packed brown sugar

1/4 cup quick-cooking oats

1 tablespoon butter, melted

Preheat oven to 400°.

Combine flours and next 4 ingredients in a large bowl and stir.  Combine milk, figs, oil, vanilla, and egg in a food processor and process. Stir the dry and wet mixtures together. Divide batter evenly among 12-15 muffin cups.

Combine brown sugar, oats, and butter in a small bowl; toss with a fork until combined. Sprinkle oat mixture evenly over muffins. Bake at 400° for 18 minutes.
