Potato, Onion and Pea Soup Recipe

My mom and grandmother make potato soup to warm up the day.  Today was a warm day in Santa Fe, but we received potatoes and onions in the share so I decided to add peas for a fresh spring touch.  My peas were frozen, but it is a good idea for a month or two into the future when we have fresh peas to highlight in a dish.  Here is the recipe.  Enjoy.

3 potatoes, chopped in small cubes

1 onion, diced

3 cloves of garlic, crushed

2 stalks of Celery, diced

1 tsp of fennel seeds

1 tsp of tarragon

1/2 cup peas

2 scallions

3 cups Chicken Broth

1 to 2 cups Whole Milk

Saute the onion with the fennel seeds.  Add the potatoes and get them browned slightly on all four sides.  Add celery, garlic, tarragon and chicken broth.  Watch the potatoes until they are tender.  Add the milk at the end of the cooking process.  Add the peas last as they only need a few minutes to cook.

  1. I think that sounds delicious. I’m a soup fan all the time but have onions, potatoes and peas on hand AND it’s a cloudy day.
