Honey Banana Muffin Recipe

Frenchy’s Community Garden had our first weekend event.  We scheduled two trucks to drive to Mesa Top Farm, original Beneficial Farm, and pick-up compost.  That garden opened in the past few years and does not have as much organic matter in the soil as we would like.  Steve has worked with the community gardens for years.

I offered to feed the group when they arrived back at the garden.  Muffins are my speciality.  Here is an easy recipe that includes local flour, honey and pecans.

Honey Banana Bread Recipe

Adapted from King Arthur Flour

1/2 cup butter

1/2 cup brown sugar (or you could use all honey)

3/4 tsp baking soda

1/2 tsp salt

1 tsp cinnamon

1/4 tsp ground nutmeg

1 tsp vanilla extract

1-1/2 cups mashed fair trade bananas (I got mine at Coop)

2 Mesa Top Farm eggs

1/4 cup local honey

2 cups local wheat flour

1/2 cup local pecans, chopped

Preheat oven to 350 degrees.  Beat sugar, butter, baking soda, salt, spices and vanilla.  Add the banana, honey and eggs and beat until smooth.  Add the flour and nuts.  Spoon into a muffin pan and let rest for 10 minutes.  (This is for the whole wheat flour to become a little more soft before baking)  Bake for 23 minutes.  Enjoy.
