Greens are a fast way to include vegetables into your dinner. Swiss Chard wilts quickly and the flavor is mild enough to eat with several types of cuisines. One of my quick dinners is tacos.
Here is my basic taco recipe with swiss chard. I also use spinach for this recipe. The tougher greens like kale and collards do not work well rolled in a tortilla.
Quick Tacos with Swiss Chard
1 lb Local Ground Beef from Marketplace
2 cups of Cooked Local Pinto Beans (dried beans should be cooked in advance)
1 Local Onion, diced
3 cloves of Local Garlic, chopped
2 Jalapeno, diced
1 tsp Red Chile Powder (or more to taste)
1 tsp Cumin Powder
2 tsps Oregano
2 handfuls of Cherry Tomatoes, cut in half
1 bunch of Swiss Chard, sliced thinly
Cook the ground beef, then drain the oil from the pan and start with a little olive oil to saute the onion. Add the spices and mix. Add jalapeno and garlic. Add beef and beans. Heat throughly. Add the swiss chard with a handful of water and a sprinkle of salt. Add a lid to the pan with a little place for air to leak out. I use a round pan to cook and an oval lid to steam the greens. The swiss chard will wilt nicely in one or two minutes. Add tomatoes. Serve on tortillas.
