This lovely dish can be made from bok choy, swiss chard, collard greens, kale or even spinach. This is a great blog to follow for whole foods and healthy living. (Of course this recipe uses butter and is not typical of her recipes) We received some great greens last week and this is a buttery and delicious way to indulge with one of them. They are after all mineral and vitamin packed greens. Enjoy!

Creamed Greens Recipe
From the Nourished Kitchen blog
- 2 tbsps butter
- 1 large yellow onion, peeled and sliced thin
- 2 bunches collard greens, stems removed, trimmed and chopped
- 1 cup heavy cream, not ultrapasteurized
- freshly grated nutmeg, to taste
- unrefined sea salt, to taste
I used all the recent greens with garlic, steamed them, added a little soy sauce and a little it of
Vietnamese red chile paste. Yum!
That sounds great. I love a little red pepper in my greens too.
