The spinach in this week’s share is amazing. I ate some last night as a salad and then went looking for my spinach ricotta gnudi recipes. What is gnudi? Basically it is “naked ravioli” in Italian. Very easy little balls to make with mostly spinach and ricotta. My kitchen has piles of recipes and notes so I could not find the recipe that was in my head. I did some Google searching to find one that I saw on Food Network and stumbled across this low carb inspired blog from a woman in Boston called All Day I Dream About Food. I do that too! Her recipe is simple and she modified it to be lower in carbs by using different flour. I have used unbleached all-purpose flour so you could substitute if you don’t have her suggestions.
