Grapefruit Ginger Tea Bread Recipe

I love to eat grapefruit for breakfast.  Last year I started looking for new ways to use the grapefruit and found this recipe in Vegetarian Times.  It was a very moist bread and did not have a strong grapefruit or ginger taste.  It also uses Mesa Top eggs, local whole wheat flour and New Mexico pecans.  Time to make it again to enjoy with coffee and tea in the morning.

Grapefruit Ginger Tea Bread

Makes 1 loaf (16 slices)

  • ¾ cup pecans (3 oz.)
  • 2 cups white whole-wheat flour
  • 3/4 cup sugar
  • 2 tsp. baking powder
  • 3/4 tsp. salt
  • 1/2 tsp. baking soda
  • 2 large eggs
  • 6 oz. nonfat vanilla yogurt
  • 1/4 cup milk
  • 3 Tbs. canola oil
  • 2 grapefruit, supremed, segments coarsely chopped, juice reserved for Glaze
  • 1 Tbs. grapefruit zest
  • 1/2 cup chopped crystallized ginger


  • 2/3 cups confectioners’ sugar
  • 1 Tbs. plus 1 tsp. freshly squeezed grapefruit juice
