Week of Meals 1/28 – 2/1/11

The Week of Meals continues this week.  This is my plan for a meal per day, mostly dinner, to eat my CSA share of fruits and vegetables.  It helps me schedule healthy meals and be able to prepare them more quickly with handy recipes.  Here is what I plan to eat this week.  How about you?  Send your tips for the week to blog@beneficialfarm.com

4oz Sunflower Sprouts, Living Sunfoods

1lb Sunchokes, Fresh Produce, ABQ

3lbs Purple Potatoes, White Mountain Farm, Mosca, CO

2lbs Red Stripe Apples, San Juan Orchard

1 Onion, Mesa Top Farm, Santa Fe

1 bottle Honey, Simply Honey in NM and CO

Weekly Plan

Friday- Begin making the Sunchoke Pickles (see below)

Saturday- See member recipes for the frozen figs

Sunday- Sunflower sprout, kalamata olive, roasted red pepper and spinach omelette

Monday- Sausage and roasted purple potatoes

Tuesday- Honey wheat bread

Sunchoke Pickles

This was a great way to eat sunchokes last year.  They are high in fiber and probiotics so I need to measure how many I eat at a time to avoid stomach upset.  These pickles are made with turmeric, chile and mustard seeds so they have a unique flavor.  The texture of the sunchokes works well with the brine and pickling process.  I canned them in small jars last year.
