Quinoa can be a lovely dish to accompany your dinner. I am using this one with some broiled talapia crusted in parmesean and breadcrumbs and roasted potatoes and brussel sprouts. The salad uses citrus to bring a light flavor to the quinoa. I also have a few apricots to chop and add to the salad. Remember to thaw them about halfway and then boil in water to retain their texture.
