Chicory Recipe

The greens that we received today are from the chicory family and have quite a deep flavor.  This type of green tends to be bitter when eaten raw.  You could add to salads or raw dishes if blended with other lettuce or greens.  This green is grilled or sauteed to reduce the bitter flavor and bring out more sweetness.  Italians use this green in many dishes.  Here is a good recipe for dinner.

Chicory Risotto

2 tablespoons olive oil

3 cups shredded chicory

1 tablespoon lemon juice (optional)

3 tablespoons butter or margarine

1 small onion, finely chopped

1 small clove garlic, pressed or minced

1 cup medium-grain white rice or

Italian short-grain white rice (such as arborio)

3-1/2 cups regular-strength chicken broth

Grated parmesan cheese
