Fruit Cobbler Recipe from Alice

The summer fruit has a beautiful sugar content that works perfectly for dessert.  I have been eating sliced apples and peaches after meals.  Alice sent a fruit cobbler recipe that she says is so good and easy that she’s been making it for years.  Thanks Alice.  Enjoy!

Ellen’s Lazy Man’s Cobbler

From Alice

Melt :1/2 to 1 stick butter in a 7×11 Pyrex dish (My pan measures 8×8″ and works fine.)

Sift: 1 Cup flour, 1 Cup sugar ,1 tsp baking powder and pinch of salt

Add: 1 Cup milk & mix well. Pour into dish with butter . Spoon fruit over batter. ( I use 1/2 apricots, half peaches, cut into bite size and pitted.)

Bake: 325-350 about 45 min to an hour or until brown on top. Serve warm.
