Salads Everyday

Beautiful lettuce!  We have been receiving a great salad mix from Mesa Top Farm for a few weeks and will receive more this week.  It is wonderful lettuce and keeps in the refrigerator for up to 2 weeks in a plastic bag.  I eat two salads everyday and need to have new ways to top my lettuce.  Here are some tips and ideas that I started this week.  Please share your favorite ways to eat lettuce!

Easy Salad Dressing for One

1 tblsp dijon mustard

2 tblsp apple cider vinegar

2 tsps honey

1 to 2 tblsp olive oil

salt and pepper to taste

Mix the mustard, vinegar and honey in the bottom of your salad dish.  Add the olive oil slowly and wisk.  It might be easier to keep the olive oil in the bottle and add to taste.  Finish with salt and pepper.  Add the lettuce and salad mixings and toss together.  I use a large pair of tongs to mix.

CSA Salad Idea

Salad mix, arugula and apricots from our CSA shares make a nice base for a salad.  Here is an idea that you could eat as a lunch, diner or side dish.

2 handfuls of salad mix

1/2 handful of arugula

2 apricots

garlic scape, chopped in smaller pieces

1 chicken breast

1/4 cup raisans

1/4 cup sesame seeds

grilled onion to taste


salt and pepper

dressing from above recipe

CHICKEN: Add a little almond oil, salt and pepper to the chicken and grill on high (400 degrees).  Let the chicken cool and cut into small slices.

APRICOTS: Add sugar and cinnamon to the apricot halves and a little olive oil.  Add to the coolest side of the grill and cook for about 5 minutes.

SALAD: Make the dressing from above recipe.  Add all other salad ingredients and toss.
