Grilled Apricot and Cherry Recipe

If you are a Facebook member, you may have seen this recipe posted this morning.  I adapted it for lunch today to have grilled apricots and poached cherries.  It is a fast preparation and cooked while my lunch grilled.  The original recipe is from the Tartelette blog that has beautiful photos and stories to accompany the recipes.  I am on their email list and receive the recipes almost daily.

Grilled Apricots and Poached Cherries

Adapted from the Tartelette Blog

4 apricots
sprinkle of cinnamon and sugar

1 to 1/2 cups cherries (pitted)
1/4 cup honey
1/4 cup orange juice

Cherries:
Wash them, cut them in half and remove the pits. Place them in a large saucepan with the honey and orange juice over medium heat and cook for about 10 minutes until soft. Remove from the heat and let cool a bit.

Apricots:
Wash them, cut in halves and remove the pit. Preheat the grill to medium-high heat. Sprinkle with cinnamon and sugar.  Drizzle a bit of olive oil on the apricots.  Grill on medium heat (my grill said 300 degrees) and try to find the cooler portion of the grill.  About 5 minutes will make nice grill marks on the apricots.  Remove from grill and let cool.  If you prepare them, starting with the cherries, you should have a nice warm fruit dish to eat for lunch or a dessert.  Enjoy.
