Pea Sprout Salad Recipe from Dena

Pea Sprouts are very young garden pea plants and this week’s unique CSA food. They  are an Asian delicacy and we are very excited to offer their fresh pea flavor to CSA members in this week’s share. These Certified Organic Pea Sprouts are supplied by Sungreen Living Foods, located here in Santa Fe. They have the fresh and vibrant taste of spring and are packed with vitamins A, C, E and Folic Acid. These delicate sprouts  can be eaten raw in a creative salad or heated very slightly in a stir-fry to maintain their texture and flavor.

Dena recommends adding the pea shoots to a stir-fry at the very end, turning off the heat and tossing a couple of times. Pea Sprouts require no chopping; just rinse, drain and dry before cooking. Use Japanese and Vietnamese cooking styles of light, fresh ingredients to maintain the delicacy of the sprout. Think basil, cilantro, lime and ginger.
