Member Recipe- Green Chile Fennel Dressing

Eric posted his dressing success from dinner last night on Facebook and I immediately asked for the recipe.  It is green chile season and I ordered some from the CSA this week.  Everything tastes better with chile and I just have to believe that it is great for your health too.  Does anyone know?

Green Chile Fennel Dressing from Eric

Ingredients

1/2 cup red wine vinegar

1 teaspoon salt

1 small head of fennel

1 bunch scallions (about 7 scallions)

1 bunch parsley (stems removed)

7 roasted green chiles, medium heat (skins and most of seeds removed)

3/8 cup sunflower oil

1/8 cup flax seed oil

Directions

Add the vinegar to the blender with salt.

Chop/mince/blend the fennel, scallions, parsley, and green chile

until a green, uniform mixture is obtained.

Add the oil and blend just long enough to mix.

Designed as a salad or stir-fried napa cabbage dressing, but feel free to try some on anything.
