Cooking Video – Green Chile & Green Olive Salsa

My friend Paul was in town this week and he created this video using his recipe for green chile & green olive salsa.  It uses the scallions and tomatoes from this week’s share.  We are also receiving frozen green chile next week and it will also be on special order if you want to make this salsa next week.  It is a great mix of mediterranean and new mexican ingredients.  Some of the flavor combinations may be new to you, but trust me that this salsa tastes great and is worth making.  The recipe is below the video link.

Green Chile – Green Olive Salsa by Paul

8 brandywine or large tomatoes

8 roma tomatoes, diced

8 cloves of garlic, diced

1 cup green olives with pimento, diced

6 scallions, green ends diced

1 small red onion or 3/4 cup diced red onion

3 Habanero peppers, diced finely

60 oz or 4 cups of roasted and chopped green chile

2 limes, juiced

2 tblsp garlic powder

1 – 2 tblsp salt

splash of balsamic vinegar

The video has step by step instructions on how to create the sauce, chopped veggies and seasoning for this salsa.
