We woke up to snow this morning. More is on the way this weekend. Time for a warm soup with the CSA vegetables. The carrots make a great base for soup. I used more than five because they were not as large. Ginger is a good thing to eat in the winter because it can boost the immune system. This soup has a lot of garlic and ginger.

Carrot, Red Lentil and Ginger Soup

a big knob of ginger
1 tablespoon olive oil
2 cloves garlic, minced
1 jalapeno, seeds removed and minced
3 scallions, chopped
5 large carrots, shredded
1 cup red lentils
4 cups chicken or vegetable stock
salt and pepper
1/4 cup roughly chopped cilantro
1/2 lemon, juiced
